Q: How can I take care of my JJT cooking knife?

first of all, self discipline is a must.

Cut whatever you want to cook, then clean your knife with hot water and dish washing soap, dry it thoroughly, put it back in its scabbard, and THEN begin to cook.

Because your JJT knife is not stainless it will rust IF YOU BEGIN THE COOKING WHILE YOUR KNIFE IS STILL LAYING DIRTY IN THE SINK. I promise.

If however your cooking knife has begun to rust and you wish to clean it, do it with steel wool and Ballistol. Take care of your fingertips!

Put the knife blade flat on a cutting board for cleaning. It will reduce the chance to cut yourself, or damage the cutting edge.

You may use a daikon raddish if you want with similar results, the raddish being a base. Adding some sodium bicarbonate is ok too.

If you are going to stop using your cooking knife for some longer time.

Check if it is clean, oil it with a neutral oil : Japanese kamelien oil, almond oil or ballistol.

NEVER PUT BACK YOUR COOKING KNIFE  DIRTY INTO HIS SCABBARD.

NEVER EVER PUT YOUR COOKING KNIFE INTO THE DISHWASHER.

This is abusing a good tool. If this happens, call me. I will help.(some good meaning friends sometimes try to help and usually put your knife into the dish washer).

Do not lend your cooking knife to anybody.

It has been designed and tailored for your specific and individual needs. Just for you. For nobody else.

If you remember these advises, you will have a lot of fun with your JJT cooking knife.

After some time your JJT cooking knife will need some sharpening. It is normal. After all it is only made of steel.

Call me. You paid for it already.  Sharpening is included into the price, it is service.

Send it to me, you will get it back as good as new, maybe better.
